Slow Cooker Brisket & Beans |
I have tried on many occasions to make a brisket… on the grill, smoking it, in the oven. This recipe is the first time I got a moist and tender brisket! I will always cook it in the slow cooker from now on!
Slow Cooker Brisket & Beans
Ingredients
1 beef brisket, 2-3 lbs.
¼ cup all-purpose flour
¼ teaspoon salt
¼ teaspoon pepper
2 Tablespoons cooking oil (such as olive, vegetable or canola)
1 lb. (16 oz.) dried pinto beans
½ cup packed brown sugar
½ cup sliced onion
½ cup sliced red bell pepper
½ cup sliced green bell pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon cayenne pepper
1 teaspoon salt
1 teaspoon liquid smoke
½ teaspoon black pepper
3 cups chicken stock or broth
Directions
1. Combine ¼ teaspoon salt, ¼ teaspoon pepper and flour; rub over all sides of brisket. Heat oil in a large skillet over medium heat. Add brisket, cook for 10 minutes on each side until browned.
2. Meanwhile, combine remaining ingredients except chicken stock in a 5 or 6-quart slow cooker. Place brisket on top of bean mixture.
3. Add chicken stock to skillet. Bring to a boil, stirring to loosen browned bits from bottom of skillet. Pour stock mixture into slow cooker.
4. Cover and cook on low for 7 to 8 hours or until brisket is tender and beans are soft.
Serve with Homemade Barbecue Sauce, if desired.
