Easy Risotto |
Risotto is a rice dish that uses Arborio rice, which is a short-grain rice that is high in starch. It is traditionally cooked by constant stirring and gradually adding liquid in small amounts, which releases the starch and makes it creamy.
This version allows you to cut out all the stirring and still end up with a creamy texture!
You can usually find Arborio rice in the Italian section of the grocery store.
Easy Risotto
Ingredients
2 Tablespoons butter, divided
1/3 cup chopped onion
2/3 cup uncooked Arborio rice
1 cup chicken broth or stock
1 cup water
¼ cup grated Parmesan cheese
Directions
1. Melt 1 Tablespoon butter in a medium saucepan over medium heat. Add onion; cook until soft and translucent. Add rice; cook and stir for 2 minutes. Stir in broth and water. Bring to a boil. Cover, reduce heat to low and cook for 20 minutes (do not lift the lid).
2. Remove saucepan from heat. Stir in remaining Tablespoon of butter and Parmesan cheese. Mixture should be creamy. If necessary, add hot water ¼ cup at a time to reach desired creaminess.
Makes 4 2/3-cup servings
