Ginger Chicken and Broccoli |
This recipe is a take on Pei Wei’s/ PF Chang’s Ginger Chicken with Broccoli. It is really good!
I did not think it was going to work out cooking the chicken in the broth, but it really makes it tender and moist, just like the restaurant version!
Ginger Chicken and Broccoli
Ingredients
1 lb. boneless skinless chicken breast, sliced and cut into pieces
1 egg, beaten
3 Tablespoons cornstarch, divided
3 Tablespoons cooking oil (such as canola or vegetable), divided
¼ teaspoon white pepper
¼ teaspoon salt
2 Tablespoons soy sauce
2 Tablespoons sugar
1 Tablespoon rice vinegar
1 cup and 2 Tablespoons chicken stock, divided
¼ cup water
1 Tablespoon minced fresh ginger
1 Tablespoon minced fresh garlic
1 Tablespoon minced scallions
2 cups broccoli flowerets
Directions
1. In a large bowl combine the chicken, egg, 1 Tablespoon cornstarch, 1 Tablespoon oil, white pepper and the salt. Cover and allow to marinate in the refrigerator for 1 hour (or overnight).
2. In a small bowl combine soy sauce, sugar, rice vinegar, and 2 Tablespoons chicken stock; set aside. In a second small bowl combine 2 Tablespoons corn starch and water; set aside.
3. Bring 1 cup chicken stock to a boil in a wok or large frying pan. Carefully place marinated chicken slices into the broth. Stir to separate; cook for 3 minutes. Remove chicken from liquid; set aside. Drain liquid and wipe out wok.
4. Heat 1 Tablespoon oil in the wok over high heat. Add broccoli and stir-fry for 2 minutes; set aside with chicken.
5. Heat remaining Tablespoon oil to wok and add ginger, garlic, and scallions; cook and stir over high heat for 30 seconds. Return chicken and broccoli to pan; stir fry 1 minute.
6. Add soy sauce mixture, bring to a boil. Reduce heat to medium. Add half of the cornstarch/water mixture and simmer and stir for 1 minute. You may add the remaining half if the sauce is not as thick as you would like.
Serve with rice, if desired.
