The addition of baking chips is a fun update on this classic cookie!

I came across some Pumpkin Spice baking chips in the store the other day and just had to try them...you can use any flavor baking chips though, such as chocolate, white chocolate, or cinnamon!


Chippy Snickerdoodles

Ingredients

¾ cup sugar
½ cup butter, softened
1 egg
¾ cup + 2 Tablespoons all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
1/8 teaspoon salt
1 cup baking chips (I used pumpkin spice)
2 Tablespoons sugar
1 teaspoon ground cinnamon

Directions

1.  Heat oven to 400°.

2. Mix ¾ cup sugar, butter, and egg in a bowl.  Stir in flour, cream of tartar, baking soda and salt until well incorporated.  Stir in baking chips.

3.  Shape dough into 1-inch balls.  In a small bowl, mix the 2 Tablespoons sugar and the cinnamon.  Roll the balls in the cinnamon-sugar mixture.  Place 2 inches apart on an ungreased cookie sheet.

4.  Bake 10 minutes or until edges are set.  Remove from cookie sheet, allow to cool on a wire rack.

Makes 2 dozen (24) cookies

Mix sugar, butter and egg

Add flour, cream of tartar, baking soda and salt
Add baking chips
Shape into a ball & roll in cinnamon sugar

Place on baking sheet 2 inches apart
Bake for 10 minutes
Cool on wire rack
