Benihana Chicken Fried Rice (Copycat Recipe)
Craving that iconic Benihana Chicken Fried Rice flavor at home? This easy copycat recipe brings all the savory, buttery goodness of the Japanese steakhouse favorite right to your kitchen!
Over the years, I’ve tweaked the original Benihana recipe to make it heartier — turning it from a side dish into a full meal. With tender chicken, fluffy rice, scrambled eggs, and perfectly seasoned veggies, this version is even better than the restaurant classic!

Ingredients
- 
1½ cups long-grain white rice 
- 
3 cups water 
- 
2 tablespoons oil (canola or vegetable), divided 
- 
1 lb. boneless, skinless chicken breasts 
- 
2 eggs 
- 
½ cup finely chopped onion 
- 
½ cup finely chopped carrot 
- 
1 garlic clove, minced 
- 
2 tablespoons soy sauce 
- 
2 tablespoons butter 
Directions
- 
Cook the rice: 
 In a medium saucepan, bring the rice and water to a boil. Reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let stand, covered, for 5 minutes.
- 
Cook the chicken: 
 In a large skillet or wok, heat 1 tablespoon of oil over medium heat. Cook chicken for about 4 minutes per side or until cooked through. Remove and cut into ½-inch cubes.
- 
Scramble the eggs: 
 In the same pan, lightly scramble the eggs into small pieces. Remove and set aside with the chicken.
- 
Sauté the vegetables: 
 Add the remaining tablespoon of oil to the pan. Sauté the onion, carrot, and garlic over medium heat until the onion is soft and translucent.
- 
Combine and finish: 
 Add the cooked rice, chicken, and eggs back into the pan. Stir in soy sauce and butter, mixing until the butter melts and everything is evenly coated.
Serve hot and enjoy that signature Benihana flavor at home!

Tips
- 
For extra flavor, use cold day-old rice — it gives you that perfect fried rice texture. 
- 
Add peas or green onions for extra color and crunch. 
- 
Drizzle a bit of sesame oil for an authentic Japanese restaurant finish.
