This is a super easy breakfast!  You just whip up the batter and throw it in the oven, leaving you free to do other stuff!

I've also seen this recipe called a German Apple Pancake.  It puffs up and makes its own delicious caramel-apple topping while it’s baking!

Ingredients:

2 Tablespoons butter
2 Tablespoons packed brown sugar
¼ teaspoon ground cinnamon
1 medium apple, peeled and thinly sliced (about 1 cup)
2 eggs
½ cup flour
½ cup milk
¼ teaspoon salt

Directions:

1.  Heat oven to 400°.  Melt butter in a 9” pie plate.  Sprinkle brown sugar and cinnamon over butter; spread evenly over the bottom of the pie plate.  Arrange apple slices over sugar mixture.

2.  Beat eggs in a medium bowl.  Beat in remaining ingredients until just mixed.  Pour batter over apple in pie plate.

3.  Bake 30 to 35 minutes.  Immediately loosen edge of pancake and turn upside down on a heat-proof serving plate.  Serve immediately.

Serves 2-4

  1. This looks really tasty! I was just recently in search of apple recipes for a couple of apples in my fruit bowl. Pinning so that next time I have apples I can try this.
