Monterey Chicken |
This is an easy dinner based on the Chicken Monterey served at Chili’s restaurant.
BBQ sauce, bacon, and cheese…how can you go wrong?
Ready in under 30 minutes!
Ingredients:
2 Tablespoons cooking oil (canola or vegetable)
4 boneless, skinless chicken breasts
½ cup prepared barbeque sauce
4 strips bacon, cooked
2 cups shredded cheddar Monterey jack cheese
Directions:
1. Heat oil on a large skillet over medium heat. Add chicken and cook, turning once, until the thickest part of the chicken is no longer pink, about 10-15 minutes.
2. Reduce heat to low. Pour barbeque sauce evenly over chicken breasts, turning to coat both sides. Top each chicken breast with a piece of bacon. Sprinkle evenly with cheese; cover until cheese is melted.
Serve with Garlic Mashed Potatoes, if desired
Makes 4 servings

DeleteThis sounds really good. I probably will skip the bacon...I know it would taste best that way, but I just don't normally keep it in the house. Thanks for an easy way to make a quick chicken dinner.
