Homemade Chicken Pot Pie |
This chicken pot pie is super easy because you don't have to roll out the crust! You can prepare the filling in advance for a super quick meal!
Ingredients:
2 cups Homemade Bisquick, divided
1 1/3 cups milk, divided
4 Tablespoons butter, divided
1 clove garlic, chopped
½ cup onion, chopped (one small onion)
½ cup carrots, diced
1 ½ cups chicken broth
½ teaspoon salt
¼ teaspoon pepper
2 Tablespoons flour
½ cup green beans
1 cup cooked chicken, diced (you can use rotisserie chicken)
Directions:
1. Preheat oven to 400°.
2. Melt 2 tablespoons of butter in a medium bowl. Add 1 cup of Homemade Bisquick and 2 tablespoons milk until mix begins to form a ball. Pat dough onto the bottom and sides of a 9-inch pie plate; set aside.
3. Melt 2 tablespoons of butter in a large skillet over medium heat. Add garlic, onions, and carrots; cook for 5 minutes or until onion are soft and translucent.
4. Add chicken broth, salt and pepper to skillet. Bring to a boil. Whisk flour into ½ cup of milk; add to skillet, stirring constantly until thickened and smooth.
5. Remove from heat, stir in chicken and green beans. Spoon into prepared crust.
6. To make top crust, combine 1 cup Homemade Bisquick with 2/3 cup milk until smooth. Spoon over filling, spreading to cover the entire top of the pie.
7. Bake for 25 minutes or until top is golden brown.
