Shish Kabob Recipe |
This Shish Kabob recipe can be used with less-expensive cuts of beef because it is marinated overnight.
I usually make this recipe for a Summertime Sunday dinner on the grill.
Ingredients:
1 pound of beef, cut into 1" cubes (you can use less-expensive round steak, or more tender sirloin or tenderloin)
1 green pepper, cut in 2 " chunks
1 red pepper, cut in 2" chunks
1 onion, cut in half and quatered
1 zucchini, cut in 1" slices
1 yellow squash (also called summer squash), cut in 1" slices
Marinade ingredients:
3/4 cup canola or olive oil
1/3 cup soy sauce
1/3 cup lemon juice
1/4 cup minced onion
3 Tablespoons minced fresh parsley (or 1 Tablespoon dried)
2 Tablespoons Worcestershire sauce
1 clove garlic, minced
1/4 teaspoon pepper
Directions:
1. Combine marinade ingredients in a bowl. Add beef cubes; cover and refrigerate for 24 to 48 hours.
2. Thread 8 12" skewers with alternate pieces of beef and vegetables.
3. Place remaining marinade in a saucepan; bring to a boil. Boil for 1 minute.
4. To grill: Grill directly over a medium heat, for 10 to 15 minutes. Turn and baste with marinade every 5 minutes, until vegetables are done.
To broil: Place kabobs on a broiler pan and broil 3 to 4 inches from heat for 9 to 12 minutes or until vegetables are done, turning and brushing with marinade once.
Serve with Homemade Rice-a-Roni!
